Jamaican Breadfruit Rundown

Ingredients
  

  • 1 Breadfruit
  • 1 tbsp Coconut Oil
  • 1 Onion
  • 3 cloves Garlic
  • 1/2 Bell Pepper
  • 1 Green Onion
  • 2 sprigs Thyme
  • 1 Tomato
  • 1/2 tsp Creole Seasoning
  • 1/4 tsp Allspice
  • 1/44 tsp Cayenne Pepper
  • 15 oz Coconut Milk
  • 1/2 tsp Salt

Instructions
 

  • Wash and cut breadfruit into quarters
  • Cut out breadfruit core and peel the skin
  • Bring water to a boil in a large pot and add breadfruit
  • Simmer breadfruit for 15-20 minutes until the breadfruit is fork tender
  • Cook onion until soft in a pan for 3 minutes
  • Add to onion garlic, bell pepper, green onions, thyme, tomatoes, and seasonings and cook for 2 minutes
  • Add the strained breadfruit to the mixture along with coconut milk and salt, bringing to a boil
  • Reduce simmer and cook until sauce thickens for 10 minutes
