Preheat oven 375 degrees F. Oil a 9x 13 casserole pan
Wash and dry the fully ripened breadfruit
Peel the breadfruit with a knife
Remove the pit and mash the flesh in a bowl
Add in and mix vanilla, ground flaxseeds, and coconut
In a separate bowl mix salt, cinnamon, sugar, and flour
Add together the two bowls and mix into a smooth batter
Pour batter into your pan and bake for 45 minutes
Start preparing the custard topping
Combine, cinnamon, vanilla, sugar and coconut milk
After 45 minutes, pour the custard mix on top of the pudding and bake for another 45 minutes
Take pudding out of the oven and let cool, then serve with whipped cream on top
