Creamy Breadfruit Pie
This comforting, creamy pudding made with fresh breadfruit and grated coconut will be a hit among family and friends. - - 2 cups fresh breadfruit peeled and diced
- - 1/2 cup grated coconut
- - 1/2 cup canned coconut milk
- - 1/2 cup evaporated milk
- - 1/4 cup sugar
- - 1 teaspoon ground cinnamon
- - Pinch of salt
Preheat oven to 350°F. Grease a 9-inch pie plate with butter or cooking spray.
In a medium bowl, combine the breadfruit, grated coconut, canned coconut milk, evaporated milk, sugar, cinnamon and salt. Mix until all ingredients are well combined.
Pour the mixture into the prepared pie plate and spread evenly. Bake for 30 minutes or until golden brown on top.
Let cool before serving with whipped cream and freshly grated nutmeg, if desired. Enjoy!
