Creamy Breadfruit Pie
This comforting, creamy pudding made with fresh breadfruit and grated coconut will be a hit among family and friends. - - 2 cups fresh breadfruit peeled and diced
- - 1/2 cup grated coconut
- - 1/2 cup canned coconut milk
- - 1/2 cup evaporated milk
- - 1/4 cup sugar
- - 1 teaspoon ground cinnamon
- - Pinch of salt
- Preheat oven to 350°F. Grease a 9-inch pie plate with butter or cooking spray.
- In a medium bowl, combine the breadfruit, grated coconut, canned coconut milk, evaporated milk, sugar, cinnamon and salt. Mix until all ingredients are well combined.
- Pour the mixture into the prepared pie plate and spread evenly. Bake for 30 minutes or until golden brown on top.
